Roasted carrots recipe
Ingredients:
- 1.3kg carrots
- 50g butter
- One tablespoon of maple syrup
- One rounded tablespoon of wholegrain mustard
Method:
- Peel and slice the carrots into batons.
- This can be prepared up to 24 hours beforehand and kept in an airtight container in the fridge.
- Place them in a pan, add enough boiling water to barely cover, then bring to the boil.
- Cover with a lid and cook for 4-5 minutes, or until soft.
- Meanwhile, combine the butter and maple syrup in a small saucepan.
- Heat until the butter has melted, then mix in the mustard.
- Take off the heat, then drain the carrots, transferring them to a heated serving bowl.
- Drizzle the warm maple glaze over the carrots, then taste and season as needed.
