Eggs do add a savoury touch to the nutty and buttery avocado, but there’s actually a more “delicious,” nutrient-rich alternative that pairs even better with its creamy richness.

Ingredients

  • One avocado
  • ½ lime juiced
  • Two to three small slices of ciabatta bread
  • 100g turkey slices
  • Salt to taste
  • Black pepper to taste

Method

To start, halve the avocado and carefully remove the stone in the middle. Using a spoon, scoop the soft flesh into a medium mixing bowl.

Cut the lime in half and squeeze its juice over the avocado to add brightness and flavour.

Season with a pinch of salt and freshly ground black pepper, then use a fork to mash the mixture until it reaches a rough, chunky consistency.

While you prepare the avocado, lightly toast the ciabatta slices until they are golden and crisp around the edges.

Spread a hearty layer of mashed avocado over the warm toast, making sure it’s evenly spread. Top it with slices of turkey and finish off with a fresh twist of black pepper before serving.
