It’s the end of another long week, and what better way to celebrate the weekend than by making a delicious brunch?
If you find yourself in a rush during the weekday mornings and you’re in the routine of only grabbing a coffee or some toast for breakfast, then the weekend is the perfect time to shake up your routine and try something new.
And one recipe which has been grabbing people’s attention on social media is Foodie Holly’s smashed breakfast tacos – as they’re so simple to make, but they taste delicious too.
The content creator on TikTok has amassed a huge following of more than 300,000 people and millions of likes across her videos, which mainly consist of simple yet tasty recipes perfect for those with busy schedules.
Her ‘ultimate’ breakfast taco video has been viewed more than 644,000 times, with the comments full of people saying how much they ‘need’ to try making them.
It comprises of several delicious parts of a full English – such as sausages and egg – all folded into a delicious and melty taco that’s sure to become a firm favourite for a weekend breakfast.
In the comments, one person said: “These look so good!” while another raved: “Spectacular give me 14 of em rn.” Here’s everything you need to make this simple recipe, with each portion making two tacos.
Smashed breakfast tacos
Ingredients
- Two mini wraps or flatbreads
- Two sausages (or vegetarian alternative)
- Two slices streaky bacon, fried until crispy
- Two eggs, scrambled
- 1 avocado, mashed up
- Sriracha sauce
- Chives, chopped
Method
- Take each of your wraps or flatbreads. Peel the skin off each of the raw sausages and press it fully into the wrap, making sure the whole surface is covered in a thin layer of the meat.
- Heat up a drizzle of oil in a pan over a medium heat. Once it’s hot, place the tacos with the meat side down and cook for a few minutes until the sausage has fully browned. Then, flip over to warm up the other side.
- Once each taco is done cooking, it’s time to fill them. On the meat side, spread some smashed avocado, before adding the bacon and scrambled egg.
- Sprinkle some chopped chives over the top, add a drizzle of sriracha, and serve.
