There’s nothing like finishing a long day and tucking into a delicious evening meal. But sometimes the hassle of trying to think what to prepare and how long it will take can be frustrating. Luckily chef Poppy O’Toole is making things easier with her delicious and simple recipes.

It wasn’t all plain sailing for Poppy who lost her job in 2020, but has since risen to success and even cooked with Jamie Oliver. The chef is starring in Jamie’s latest Channel 4 show Jamie’s Air Fryer Meals.

The chef, who is a self-confessed ‘carbie’, is well known for her quick and easy meals and doesn’t shy away from using an air fryer for the majority of her recipes. In her latest viral TikTok cooking video she tested out how to incorporate McCain’s new Air Fryer Fries into meals. She prepared coconut prawns with bang bang sauce on a bed of chips. The dish takes just 10 minutes to prepare and five minutes to cook.

Ingredients you need:

  • 150g raw king prawns
  • Three tablespoons of plain flour
  • One teaspoon of garlic granules
  • One teaspoon of onion granules
  • One teaspoon of cayenne pepper
  • One teaspoon of dried basil
  • Half a teaspoon of chilli flakes
  • Salt and pepper
  • Two eggs
  • 75g of desiccated coconut
  • 75g of panko breadcrumbs
  • 75g of mayonnaise
  • One tablespoon of sweet chilli sauce
  • One teaspoon of hot chilli sauce
  • One lime, zested 1/2 juiced
  • 200g of tenderstem broccoli
  • Two spring onions – sliced for garnish
  • One sliced red chill
  • 250g of McCain Air Fryer Quick
  • Crispy French Fries

How to cook:

Step 1: Start by preheat the air fryer to 200C. Then in a large mixing bowl, whisk together the plain flour, salt and pepper. In another dish, whisk the egg with the dried herbs and spices. Season the egg mix well with salt and pepper then set aside. In a large bowl or dish mix together the panko breadcrumbs and desiccated coconut.

Step 2: Tip the prawns into the mixing bowl and coat in the flour then pass them through the spiced egg mixture. Shake off the excess egg and, using your hands, transfer to the bowl of panko and coconut. Press the coconut onto the prawns so it sticks.

Step 3: Tip the prawns into the air fryer basket and spray with oil. Air fry for 4-5 minutes until the coconut and panko is toasted on the outside and the prawns are cooked, turning halfway.

Step 4: At the same time as the prawns, drizzle the tenderstem broccoli with oil, salt and pepper and air fry for five minutes.

Step 5: When the prawns go into the air fryer, in the other basket pour in the McCain Air Fryer French Fries and cook for 5 minutes, shaking halfway. This recipe is perfect, because everything cooks at the same time!

Step 6: While everything is in the air fryer, in a small bowl mix together the lime zest and juice, mayonnaise and chilli sauces. Season to taste with salt and pepper.

Step 7: Serve up the prawns, tenderstem broccoli and the McCain Air Fryer French Fries with plenty of the spicy bang bang mayo and a sprinkle of sliced spring onions and chopped chilli.

Speaking about the recipe, Poppy said: “I can’t control my excitement because McCain has launched a new air fryer range, including these fries that take five minutes.

“The fries that not only taste fantastic (if I do say so myself) but also cook in a matter of minutes. To celebrate the launch, I created six unique recipes designed specifically for the air fryer, that can be whipped up in no time at all, guaranteed to elevate your weeknight dinners!”

Fans on TikTok have hailed the recipe as “delicious” and “very cool”.
