Michael Mosley’s healthy breakfast recipe will help you sleep better – and stay full

Eating a breakfast that’s going to set you up well for the day is really important – especially if you’re trying to overhaul your life and make healthier choices

We all know that eating a healthy breakfast will set you up right for the rest of the day, but it’s so hard to motivate yourself to eat something nutritious every morning.

Dr Michael Mosley, who popularised the Fast 800 diet, has shared why eating a good meal in the morning is really important, highlighting that there are a wealth of benefits if you eat the right things.

On his Fast 800 website, he shared a super simple breakfast that you can indulge in, and it even has additional benefits for you, such as potentially better sleep, which is of utmost importance.

The eggs and avocado breakfast will ensure you’re consuming “healthy fats like Omega-3 fatty acids”, which “have been shown to improve sleep duration and quality.” They’re found in foods like oily fish, eggs and avocados. Dr Mosley also described the breakfast as “perfect to break a fast and keep you going until a night of good sleep.”

It promises to keep you “feeling full for longer thanks to its healthy fats and protein content”, and contains 392 calories per serving.

Ingredients

  • 10g butter
  • 100g mushrooms, quartered
  • 60g spinach
  • 2 eggs
  • ½ avocado, sliced
  • ¼ tsp chilli flakes, optional

Method

First, heat the frying pan over medium-high heat, and melt the butter. Then, add the mushrooms with a little salt and pepper, then cook for five to eight minutes until they’re cooked through and browning. Then, add the spinach and stir through the mushrooms until the mixture is wilted.

Alternatively, remove the mushrooms and wilt the spinach in the pan – but it may need a little splash of water. Remove it from the pan and keep it warm. In the same pan, cook the eggs as you prefer them. You may have to add more butter or olive oil so they don’t stick. Then, serve the mushrooms, spinach and eggs with the avocado and a sprinkle of chilli flakes (if you wish).
